How to Store Wholesale Eggs in a Commercial Kitchen: Best Practices
Getting your wholesale egg delivery is just the start. How you store those eggs can make a real difference to quality, safety and shelf life — and when you're running a busy kitchen in Maroochydore, Noosa or anywhere across the Sunshine Coast, efficiency matters.
Temperature Is Everything
Wholesale eggs must be stored at a consistent temperature between 2°C and 5°C. Fluctuating temperatures are the number one enemy of egg freshness. Avoid storing eggs near refrigerator doors where temperature changes with every opening. A dedicated cool room shelf or middle fridge shelf is ideal.
Keep Eggs in Their Original Trays
Our 700gm wholesale egg trays are designed to protect the eggs and allow airflow. Don't transfer eggs into generic containers — the original packaging helps absorb strong odours from other foods and maintains the right humidity around the shell.
Store Pointy End Down
This one surprises a lot of kitchen managers. Storing eggs with the pointed end down keeps the air cell (inside the rounded end) at the top, which helps maintain yolk position and extends freshness. It's a small habit that makes a measurable difference over several days.
FIFO — Always
First In, First Out is non-negotiable in commercial kitchens. When your weekly wholesale delivery arrives, place the new trays behind the existing stock. This ensures older eggs get used first and nothing goes to waste.
Check Your Delivery on Arrival
At Suncoast Eggs, we take quality seriously, but it's always good practice to inspect your delivery on arrival. Look for cracked shells, and if in doubt about any egg, do the float test — fresh eggs sink in water, old eggs float.
Shelf Life Guide
Properly refrigerated whole eggs in their shell: up to 5 weeks from lay date. Once cracked and stored in a sealed container: use within 2–4 days. Hard boiled eggs (unpeeled): up to 1 week refrigerated.
